If you want a low fat pancake mix, sub the regular flour with wheat flour

Lemon pancakes

Ingredients
2 cups of wheat flour
1 tablespoon of sugar
2 teaspoon's of salt
1 tablespoon of baking powder
2 teaspoon's of baking soda
1 lemon
2 eggs
1 cup of milk (low fat)
1 teaspoon of vanilla extract

Prep:
Zest your lemon, or peel out the lemon skin leaving the white
and mince until fine
Juice half the lemon
Sift your flour, baking powder, soda, salt, sugar into a large bowl
Add lemon zest, juice, eggs, vanilla and milk in and mix with a whisk or if you have it, hand held mixer
Proceed to mix until flour disappears and the batter is smooth, if it is too runny, add a little bit more flour

Cooking
In a pan, put flame to medium high, add a little oil
Pour a laddle of that mix in, and wait until bubbles appear on the sides, now you can flip
FYI, first pancakes always turn out terrible and retarded (sorry mentally challenged) so don't be disappointed

why not use traditional recipe - milk, four and eggs - it's much cheaper then using a mix and you control what you put in it. Also its the toppings and what you fry them in that you have to look out for

There is Bisquick, Healthy Smart. There is also many other along those lines. Hungry Jack is my fav but that is just my opinion. Aunt Jemima is great but not sure if they have low fat. If they don't they sure should people would go crazy for it!

Buttermilk Pancakes
Start to Finish: 25 minutes

Ingredients
1-3/4 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg, slightly beaten
1-1/2 cups buttermilk or sour milk (see tip)
3 tablespoons cooking oil
Desired fruit options (optional)*
Desired syrup (optional)

Directions
1. In a large bowl stir together flour, sugar, baking powder, baking soda, and salt. In another bowl use a fork to combine egg, buttermilk, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy). If desired, stir in desired fruit.

2. For standard-size pancakes, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet, spreading batter if necessary. For dollar-size pancakes, use about 1 tablespoon batter. Cook over medium heat for 1 to 2 minutes on each side or until pancakes are golden brown, turning to second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm. If desired, top with syrup. Makes 12 standard-size pancakes or 40 dollar-size pancakes.

3. *Fruit Options: Stir one of the following fruits into the pancake batter: 1/2 cup chopped fresh apple, apricot, peach, nectarine, or pear; 1/2 cup fresh or frozen blueberries; or 1/4 cup chopped dried apple, pear, apricot, raisins, currants, dates, cranberries, blueberries, cherries, or mixed fruit.

4. Pancakes: Prepare Buttermilk Pancakes as above, except substitute milk for buttermilk, increase baking powder to 1 tablespoon, and omit the baking soda.

5. Whole Wheat Pancakes: Prepare Buttermilk Pancakes as above, except substitute whole wheat flour for the all-purpose flour and packed brown sugar for the granulated sugar.

6. Buckwheat Pancakes: Prepare Buttermilk Pancakes as above, except use 3/4 cup all-purpose flour and add 1 cup buckwheat flour.

7. Cornmeal Pancakes: Prepare Buttermilk Pancakes as above, except use 1-1/4 cups all-purpose flour and add 1/2 cup cornmeal.

8. Bran Pancakes: Prepare Buttermilk Pancakes as above, except use 1-1/2 cups all-purpose flour and add 1/4 cup oat bran, wheat bran, or toasted wheat germ.

I don't know of any mixes but I make my own which is low fat.

2oz plain flour
Pinch of salt (optional)
1 egg
100mls skimmed milk.

Weigh the flour (and salt) and then gradually add the milk. When mixed add the egg.
Spray a pan with frylite or similar and then simply fry a little of the mixture. Depending on the thickness you want you should get around 4 pancakes from the mixture above.
