Why does garlic lose its harsh bitterness after just minutes of cooking?!


Question: When you cook the garlic, you are altering the structures within the cells, and causing the sugars to "come out". Similar to when you carmelize onions. The difference is when you cook garlic you NEVER, ever want to cook it to the point of being brown - that will make it even more bitter!

Want really fantastic garlic? Try roasting it! I did this for the first time the other day to put in some mashed potatoes and OH YUM!

You just slice off the top, so all the cloves are exposed on the top. Peel the tough outer part of the garlic off, then place the entire head in a square of foil. Drizzle with olive oil, sprinkle with salt and pepper (a good pinch of each) then fold the foil to completely surround the garlic. Toss in a 400* oven for about 25 minutes. When you take it out the garlic will be soft, probably golden but not brown or burnt, and will be so sweet and delicious you could eat it straight if you wanted to!

hmmmmmmmmmmm r u seriously tat dumb not to watch the food network they tell u about it all the time its coz of the flavors that r beng cooked they start to spread to watever food or watever mixture u have the garlic in hehehehe

Not really, but if it's over cooked it will turn your whole dish bitter. Boiling it may cut the intensity a bit.
