grits are a grainy type thing sort of like oatmeal, except that they are savory (they can come in plain, butter, bacon, cheese flavors) i think it's made from corn.
yams are what we call sweet potatoes, you know, those orange potato-root things. i think it's the wrong word for them in actuality, but that's just what they're called here.
collard greens are different types of a leafy cabbage-type vegetable. it's cooked with a variety of meat and spices like ham and onions, etc.
