I am catering my sons wedding how many pounds of ham and turkey breast for meat trays for 250 people?!

4-6oz of each type of meat per person

which translates into between 62 and 93 pounds of each meat. I would buy somewhere in the higher number since no one wants to run out of food at a wedding :)

Depends on the time of day and the eating habits of the guests. 1/4 # / person for heavy eaters and 1/3 to 1/2 that for light eaters. I would guess about 40 pounds for an average crowd.
