Easy cheap meals for a busy college student?!

This makes a bunch but freezes very well.

Taco Soup

1.25 lbs ground beef, browned and drained
1 medium onion, diced
1 can diced tomatos
1 pkg taco seasoning mix
1 pkg Hidden Valley Ranch salad dressing mix
2 cans rotel tomatos
2 cans Ranch Style Beans
2 cans whole kernel corn
1-2 cans water, depending on how soupy you like it

Mix all ingredients in a large pan. (Don't drain any of the canned stuff.) Cook on the stovetop for about an hour. Top with grated cheddar cheese and Tostitos chips. (More onion is good too.) This makes a bunch and it freezes very well--enjoy.

Avocado on French Toast:

Per person you will require:

1 slice of bread
1 small egg (beaten and seasoned)
1/2 an avocado (skinned and mashed)
1 small tomato (thinly sliced)
6 thin slices of cucumber
2 or 3 roughly torn fresh basil leaves
Salt/freshly ground black pepper
Olive oil for frying

Add a little olive oil to a non-stick pan and bring up to a medium to high heat. Draw the bread carefully through the beaten egg to coat it completely on both sides but avoid breaking it. Fry it for 3 to 4 minutes on each side.

It is possible to mash the avocado straight on to the toast but I prefer to do it beforehand in a small bowl. Spread it carefully over the toast, add the cucumber slices and the tomato and season. Finish with a scattering of torn basil leaves and an optional drizzle of extra virgin olive oil.

This is quick and easy can be eaten any time of the day. I usually end up eating it all week long

Healdsburg Inn Quiche

5 eggs
1 c milk
3/4 cup bisquick
2 c grated cheese
1/2 tbs. olive oil or cooking spray

In a 9X13 pan oil and put in 2 cups of cheese and pat down. Now comes the creative part , you can chop up ham, sausage, mushrooms,onions, tomatoes, broccoli, aparagas, artichokes, peppers, pepperoni or what ever you like and sprinkle on the next layer. Add herbs if you wish. In a bowl, mix eggs, milk and bisquick and pour on top. Bake 45-50 min. Eat warm or cold.

Ramon Noodle and bread or mac n cheese.

I eat alot of nuts. They are pretty cheap if you get something like peanuts, and they are really filling and good for you. I also eat alot of peanut butter, another thing thats really cheap and good for you. I am not sure if you are looking for health along with this budget.

Scrambled eggs can be cooked in the microwave and are also super cheap. Just scramble it and stick it in the microwave for 1-2 minutes until firm, then put on bread.

So there you go. Eggs, nuts, peanut butter, bread. Cheap, good for you, and super fast.
