For cheese I'm serving as a snack, yes I let it come to room temperature.
The flavor of cheese is best when eaten at room temperature, so I remove it from refrigerator one to two hours in advance of serving time. Soft cheeses take a shorter amount of time to come to room temperature than firm and hard cheeses. However, it is best to set out only the amount of cheese you will eat to prevent the cheese from becoming dry and tough from being repeatedly warmed and chilled.
If I'm using cheese in a recipe where it will be cooked or baked, such as a casserole, I don't let it set out first. I take it straight from the fridge and use it.
To serve it, as in a cheese platter, it is better at room temperature.

now to be serious,. i take mine straight from the fridge also, because it makes it easier to grate. but i grate before i cook, so the grated sheese sits there and becomes room temperature and ready to be added to whatever wonderful dish i have concocted. yay!
I never do it. It will get soggy.
you should treat cheese like a good red wine take out of the fridge until it is at room temp
