The fats break down when cooking, then when chilled and re-heated they release from the cheese and just kind of encase the macaroni instead of staying in the cheese.

I agree, its like the cheese changes somehow. More watery?

never the same after you cook it and it cools down.

Add a bit more cheese and just a little milk before you reheat it.helps a lot.

If you make it from scratch, (white sauce then add grated cheese till it melts, never boil) then add it to each serving of cooked macaroni instead of mixing it all together, the next days serving will taste fresher!!

yea i like it better as a left over too

I'm weird but my favorite way to eat it is after its gotten colder and starts sticking together. Oh yummy.

I totally agree, it tastes stale, and anyway I don't like cheesy foods that aren't fresh.
