Get a cookbook from the turn of the 19th century, it probably has the recipes in it. I doubt you will go to the trouble of actually smoking your own bacon, it is a great deal of work and it will take several attempts before you have the formula just to your liking.
buy pork belly sliced thinly like bacon strips. Then rub these strips with salt and store in the refrigerator even just overnight. This should be ready to fry the next morning.
You can buy bacon without any preservatives. I know that Trader Joe's carries it. You may check any of the stores in your town that sell organic food.
