What is the yellow boot-like covering on the fresh chicken's feet? should it be removed before cooking?!

Question: It is just a layer of thick skin that protects the tendons of the leg and feet of a chicken , it is considered a delicacy in some Asian and Oriental restaurants, they are stripped and cleaned then boiled or pickled and eaten cold. Most Americans have not experienced this delicacy. I have tried the in a traditional family Chinese meal with jellyfish, and noodles, and duck sausage medallions.... not bad
