I have a swordfish steak. I have never cooked one before. I have butter, olive oil and garlic. Ideas?!

Answers: I can either pan sear or cook in the oven, or both. What am I looking for to know that is it done? I do not have a thermometer.

Depending on how thick they are and how much they weigh....a 5 ounce steak you should cook for about 1 & 1/2 to 2 minutes on each side. Also, you can put some butter in w/your olive oil to give the fish some more flavor from the butter. If you have red pepper flakes, they are good on the fish as well. Try infusing the oil first with cloves of garlic. It'll give the fish that garlic taste without going overboard on it.
Put a bit of butter and some some olive oil in a pan put & some bay leaves if you have them.
Put fish in skin side up and fry on full heat for a couple of minutes. Salt and pepper to season.
Put the lid on the pan and pour some water in.
Cook for about 3 minutes on a medium heat checking when the flesh is white and flacky.
Swordfish can turn rubbery if overcooked so be careful.
Serve with french fries.
I prefer mine broiled. Preheat broiler. Place fish on greased unheated rack of broiler pan and brush with melted butter. Broil 4 inches from the heat for 4 to 6 minutes per 1/2 inch or more thick, turn once halfway through the broiling. Season to taste & serve.
For pan frying I do it almost the same. In pre heated pan over medium heat. I put 1 tablespoon virgin olive oil & 2 tablespoons butter in the pan to heat first then add the steak. This way I will also add a sprinkle of salt & pepper while cooking before turning. Serve when ready.
I usually serve with sauteed green beans or asparagus and a sauteed banana and slivered almonds. All done in butter & olive oil. I also serve 1/2 lemon or lime with it.
The reason I use banana is that once when dining out at a 4 star restaurant that was how it was served, I loved it then and now I do it myself.
Chop the garlic finely and season the steak with salt, black pepper and garlic and rub with the olive oil.
Heat the butter with some olive oil in a frying pan. Fry the steak over medium heat for 5-7 minutes on each side. Its cooked when easily flaked with a fork

swordfish is of the same family as shark and any recipe for shark can be used as for knowing if it is cooked just press your clean finger onto the fish the firmer that it feels means the more that it is cooked so just cook it until it is still a bit springy and this will be cooked enough.
if you over cook it there will be no give to the flesh when you prod it and will be like eating swordfish cardboard not nice
bake it so its healthier. then drizzle a lil olive oil and salt and pepper before putting it in the oven. and a lil lemon for a twist.
put the butter and garlic on a pan and make it a lil toasty. then before serving the fish, garnish it with the garlic.
