Leftover caseroles or anything easy to pack left from supper the night before if he has a way to heat it, even soup will work in this case.

If there is a Micro oven you can pack anything> left overs from the night before. Sandwiches, soup, salads, pasta,tacos,etc...

sandwiches are good as there are loads of fillings you can put in between bread.
When I had a packed lunch I would normally have:
sandwich, nut or chocolate bar and some fruit.
Other things you can also pack are a salad, microwave meal, pot noddle, anything in a packet really.
I always try and make extra of whatever is for dinner and pack up the leftovers for lunch for both my husband adn myself. What we also do is go ona cooking "binge" once a month or so and make a whole bunch of things that can be frozen (soups, chili, stew, spagetti, lasagne) and i freeze them in individual containers. That way you can grab what you like from the freezer in the morning and voila, lunch. This is also great for dinner someimes when or the other works late and you don't want to cook a meal for one.
It the benefit of quick "frozen" dinners without all the preservatives. Hope this helps.

with baked beans, grated cheese and yoghurt
Mini Pizza – split an English muffin, spread with tomato paste, top with chopped
capsicum, mushroom, pineapple, ham and grated cheese - and grill
