If chicken is so common & widely available, why is sliced deli chicken lunchmeat so expensive?!

I am a former chef and like hams, it is a combination of various pieces pressed into a form, the seasoning and cooking is alot longer and it is just alot more labour intensive procedure.

Both chicken and turkey are seasoned and then either formed into a round or oval roast like form, steam cooked and ether smoked or roasted to added those additional flavours, the other flavours like pesto, sundried tomato, cajun if you look closely have layers, when I first started out as a chef we had only one product like that.

It was called turkey roll this foul looking ground grey mash in a round form, it was used mostly for club sandwiches in low end places and even for hot turkey sandwiches the ones with gravy, now they have more pure and unadulterate product, all meat not just ground reminance.

Because it is popular and so commands a higher price and also because there is more processing and handling involved. Deli meat require longer refridgeration and storage and display effort.

i have wondered that too, maybe it is because it tastes better than ham or turkey so people will pay more for it?

Why are there so many ostriches? They said there would only be a few. This isnt fun at all.
