no problem.. no ham... cut off the roots ... and cook as always..

Trow the cut off root behind your backyard ... in a couple of mount you got a potato bush...

As long as they are still firm, just cut the roots off, and they are fine.

i just pull off the sprouts peel them put them in cold water and they should firm up
