Question: Being a former chef the term is in reference to the condition, in processing there can be tears in the skin, broken bone due the slaughtering process, mising wings and other conditonal issues with the flesh or skelatal problems.

It happens with chickens, turkeys and ducks that is why they are slightly or alot cheaper than a Grade A or fresh bird, and are alway frozen, the quality of the meat is the same as a better grade it just the inperfection that limit it from being sold as a prime Grade A bird.
