What is it called when they remove the insides of a fish?!

Gutting. That's all I have ever heard it called. Though, de-gutting would be more appropriate.

I've always called taking out any animal's innards (even fish innards) "gutting", as in, "Hold my Coke for me one minute while I gut this fish" or "Gee, Charlie, you sure are fast at that. Gutting fish seems to be your thing."

Of course when you're scaling the scales off the outside of the fish it's "scaling." When you're dealing with catfish, it's more like peeling skin off. In my family we call it skinning the catfish.

It is called gutting the fish. If they are to be eaten, I hope they aren't thrown on the deck of the ship. But it is still called gutting, because they are removing the guts.
