I made fried rice with 6 days old coocked rice,but at the end the rice came up so firm it was hard to eat.why?!
Answers: Because it was six days old. Cooked rice doesn't retain it's texture for very long. Thy using only day old rice, at the most.
I'm not sure, but I'm sure it has something to do with the fact that it is previously cooked, and probably had it's starchy core removed already...kinda like when you heat up a piece of leftover steak, it is usually drier, too. I'm no chef, that's just a guess.
Why in the world would you use already cooked rice that was 6 days old????
You fried it, rice is just reheated quickly, keep it moving.
Heat it first and remove, cook up every thing else, and then add rice again.
the rice is only suppose to be day old rice, not dead rice, all the water is gone after 2days
