Just a nice salad is fine with me :)

I love mixed greens with sliced red onion, mandarin orange segments, some cut up strawberries, feta cheese, slivered almonds and a balsamic vinagrette with a couple dashes of Italian seasoning blend added.
This is my go to salad anytime I need to bring one somewhere, it's always gobbled right up!

I think a great salad is romaine lettuce, shredded carrot, feta cheese, craisins, toasted walnuts, a light vinagrette dressing.

One of my faves is below. I also love baby spinach (stems off), Craisins, toasted walnuts or pecans, blue cheese crumbles, and a homemade viniagrette. This is a salad I fix about 2-3 nights a week.

Jackson Salad

Salad:
4 heads romaine, cut into bite-size pieces
2 cans Hearts of Palm, drained & chopped
2 cans Artichoke Hearts, drained & chopped
8 strips crisp bacon, crumbled (or more to taste)
1 small pkg. feta cheese, crumbled

Dressing:
1/2 small onion (about 1/4 cup)
6 Tbsp, cider vinegar
4 tsp. spicy brown mustard
1 tsp. sugar
1 tsp. salt
1/2 tsp. black pepper
1 cup vegetable oil (can use some olive oil)

Assemble salad and toss.

In blender or food processor, combine all dressing ingredients. Add oil last and slowly. Pour dressing over salad, toss, and serve. Wonderful! Serves 16.

PACIFIC RIM CHICKEN SALAD

2 packages Asian ramen noodles with seasoning
4 skinless, boneless chicken breast halves, cooked and shredded
1 cup sliced almonds
1 can (16 oz.) mandarin oranges, drained
1 can (6oz.) sliced water chestnuts
1 cup vegetable oil (i leave most of this out)
3/4 cup sesame seeds
6 tbsp. vinegar
3 tbsp. sugar
1 head romaine lettuce
1 bunch green onions

Break up dry ramen noodles and combine wiht chicken in a large bowl. Toast almonds in a dry skillet just until they begin to brown. Add to chicken mixture. Toss with oranges and chestnuts.
In a medium bowl, mix ramen seasoning, oil, sesame seeds, vinegar, and sugar. Pour over chicken mixture, tossing to coat. Freeze in a zippered bag.
On the day you will serve it, thaw in the refrigerator and toss with lettuce and green onions. And remember, snip the lettuce and onions with kitchen shears; it's so much easier than using a knife.
Serve cold. Great with whole wheat rolls or poppy seed bread!

My 7 year old can eat two servings and still want more!

This ismy very favorite salad:
Betty's Salad
That is the name for this salad here in the midwest. It may have another name other places but it is wonderful!!
1 head lettuce
1 pkg. spinach
1 can bean sprouts(drained)
6 hard boiled eggs, diced
1-2 cans water chestnuts, drained and sliced (I don't add these)
1 lb. fried bacon, crumbled
Dressing:

1 C. oil
3/4 C. sugar
salt to taste
1/3 C. catsup
1/4 C. vinegar
1 T. Worcestershire sauce
1 small onion
--------------------------------------...

Mix salad ingredients in large bowl.
Mix dressing in blender and pour over salad.

Romaine lettuce, grilled chicken, diced tomatoes, pumpernickel croutons, shredded cheddar cheese and ranch dressing.
