Every one I've ever been to has been fried oysters and pit beef. The firehall in my neighbor used to have "Ham and Oyster roasts" when I was a kid. I used to volunteer to wait tables for them for all the FREE OYSTERS I could hold! Those were the days. My guess is it's very much a Maryland/Chesapeake Bay region thing. Always very community based-- churches, fire halls, American Legion, etc..

Well, first the bull gets a couple of things removed. Then they cook the "Oysters".. and I am afraid that these don't have any shells, so avoid them at all costs.. other than that, it is usually a roundup castration party and they may de-horn at the same time.

I have never been to a bull or oyster roast but I have been to a hog roast. As well i know what an oyster roast is. An oyster roast and a hog roast are parties. These parties involve pot luck type food and large amounts of alchol. Generly the hog roast involves a whole hog put on a BBQ spit for 12 or 24 hours. the party starts with the cooks that sit up all night and drink while cooking the hog the night before. sometine the next afternoon the guests show up with the side dishes and the party begins. In the case of a oyster roast the oysters are cooked when the guests arive.
