Answers: Why do onions make peoples eyes water? Whenever I'm cooking, and I have to cut up an onion, it makes my eyes sting, I know it happens to most people, but why?
When you slice through an onion, you break open a number of onion cells. Some of these cells have enzymes inside of them, and when they are sliced open, the enzymes escape. The enzymes then decompose some of the other substances that have escaped from sliced cells. Some of these substances, amino acid sulfoxides, form sulfenic acids, which then quickly rearrange themselves into a volatile gas.
The gas reaches your eyes and reacts with the water that keeps them moist. This changes the chemical's form again, producing, among other things, a mild sulfuric acid, which irritates the eyes. The nerve endings in your eyes are very sensitive and so they pick up on this irritation (this is why our eyes sting when we slice onions). The brain reacts by telling your tear ducts to produce more water, to dilute the irritating acid so the eyes are protected. Your other reaction is probably to rub your eyes, but this will actually make the irritation a lot worse, of course, if you have onion juices all over your hands.
Because they have a bad smell
Well, I can't give you the exact reason, (some type of "chemical" thing in the onion..), but if you put your onions in the fridge, it will stop them from making you cry when you cut them.....It does work!!
Breath through your mouth and not your nose and it will minimize the tears.
Peeling, cutting or crushing an onion's tissue releases enzymes called allinases, which convert these molecules to sulfenic acids. The sulfenic acids, in turn, spontaneously rearrange to form syn-propanethial-S-oxide, the chemical that triggers the tears.
Im not totally sure how it makes you cry but I know how to prevent it happening....
Keep your mouth closed when cutting onions and you will find that you wont cry....
silly as it sounds, it works and I swear by it now.
The tears are the defense mechanism towards some kind of acid released from the onions when you cut them, sorry I can't give a more scientific explanation.
When cutting into an onion it causes the onions natual membanes to rupture releasing their juices in the air. now these juices contain a bit of an acid and when it gets into the eyes yes it does burn and irritate. I have known people to wear goggles when cutting their onions because it bothers them so. A towel between teeth helps as well but not as much as the goggles.
They don't its all in your head if you belive it enough then it will actually happen.

To keep your eyes from watering, if your faucet is stainless steel, run cold water on your hands while rubbing the faucet for a few seconds. For some reason, your eyes won't water while cutting an onion.
It is the oil that give off the vapours.
Cutting Onions.
Use a very sharp knife, and slice, don't chop, or just push your knife down through them.
You could put them in the fridge for an hour.
Running under cold water will take some of the sharpness away, and it is an ideal way to tone them down if you wish to use them uncooked in a salad.
