My favorite fish to eat is Salmon. I bake it in the oven wrapped in foil, with onions, garlic, fresh dill, lemon slices, a dash of pepper and a little olive oil. I make sure I leave the skin side bare of oil, so that it sticks to the foil. You can eat salmon skin, but I prefer not to. Making the skin stick to the foil makes it easy to de skin the fish for eating.

I also like cod or halibut with a good beer batter and home made fries.

Fried catfish with hush puppies, coleslaw and big glass of sweet tea.
And I don't care if its bad for you.

Salmon cooked on a wooden plank on the grill with butter and spices is absolutely AMAZING!!

My favorite fish to eat is red snapper. I like it fried and also done for a dish done in my mom's home country of Panama called ceviche.

I like about any kind of fish, and I prefer it grilled with a little good quality olive oil and spices.

I love Grilled Swordfish. It's my favorite marinated, with a little lemon squeeze on top. But, because of the mercury scare, I switched to wild caught salmon. Supposedly it's less contaminated. I eat that grilled, but baked is good too. I found this amazing recipe with strawberries, honey, and dill on top. I know it sounds like a weird combo, but it's actually so good!
