I don't even know Prego and Ragu I think I know Ragu but i'm not sure.
A little olive oil in the pan, fry some onions in it and some fresh garlic, put lots of cut up fresh tomatoes in, let it simmer, salt, pepper, oregano..and you are done! tastes way better then Prego or that other stuff
Cut up a bunch of tomatos and slice up onions and your favorite veges. Stir fry them in a sauce pan then dump over your pasta. Add basil, salt, pepper and mozzarellas for flavor
1 can whole, peeled tomatoes, 1 can diced tomatoes, 1 can paste, garlic, salt to tast. Simmer down on med/hi, stirring occassionaly for 10 min. and it's ready
Grilled fresh tomatoes sauteed into some olive oil with basil, oregano and garlic. Toss some pasta, top with some parmesian.
2 Tbsp olive oil
1/2 medium onion, finely chopped
1 small carrot or 1/2 large carrot, finely chopped
1 small stalk of celery, including the green tops, finely chopped
2 Tbsp chopped fresh parsley
1 clove garlic, minced
1/2 teaspoon dried basil or 2 Tbsp chopped fresh basil
1 28 oz. can whole tomatoes, including the juice, or 1 3/4 pound of fresh tomatoes, peeled, seeded, and chopped
1 teaspoon tomato paste
Salt and freshly ground black pepper to taste
1 Heat olive oil in a large wide skillet on medium heat. Add the chopped onion, carrot, celery and parsley. Stir to coat. Reduce the heat to low, cover the skillet and cook for 15 to 20 minutes, stirring occasionally until the vegetables are softened and cooked through.
2 Remove cover and add the minced garlic. Increase the heat to medium high. Cook for garlic for 30 seconds. Add the tomatoes, including the juice and shredding them with your fingers if you are using canned whole tomatoes. Add the tomato paste and the basil. Season with salt and pepper to taste. Bring to a low simmer, reduce the heat to low and cook, uncovered until thickened, about 15 minutes. If you want you can push the sauce through a food mill to give it a smooth consistency.
Makes 2 1/2 cups of sauce.
Tinned tomatoes, basil, oregano, coriander, garlic. It's nice to add some chili powder as well.
sweat off some onion and carrots in butter, when soft add some tinned tomotoes, garlic, basil, herbes de provence, a slash of white wine bring to the boil then simmer and add some milk just a touch it takes away the acid from the wine and puree. Chuck in a few olives at the end to warm through hey presto!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!...
Really easy alternative Meat Sauce
Browned onions & chopped garlic
(you can pass on those actually)
Ground beef (really low fat 93-7, etc)
One bottle just about any spaghetti sauce
(I actually have been using one from Costco)
Can small diced tomatoes w/Basil, Oregano, onions
(or similar) Hunts brand - they have some great ones
Simmer
Bake halfed sourdough bread spread w/mix of melted butter
chopped garlic and/or garlic salt, wrapped in foil 25 min)
then placed open under the broiler for no more than a minute.
Pour sauce over cooked spaghetti
You can substitute ground turkey. A friend of mine always includes some Italian Sausage.
Ciao!
You can actually doctor up Prego. Before you add the sauce to the pot, brown some garlic, onions green, and bell pepper. But make sure you don't burn the garlic. Add the sauce and you've perked it up a bit!!
In a large pot over med-heat saute a minced onion in a drizzle of canola or olive oil. Add 3 minced cloves of garlic and continue sauteing until garlic is soft and onions are caramelized. Remove skins and seeds of 4-6 tomatoes and crush through a grinder, food processor, or blender. Add tomatoes to sauteed minced onion and garlic. Add 2 basil leaves, a generous pinch of salt and pepper, red pepper flake for addtl heat, and 2 Tblsp of tomato paste. Add 1 cup of chicken or beef stock, bring to a boil, then reduce heat to low and simmer covered for 1 hour. Add cooked ground meat if you want a meat sauce. Check periodically for desired consistency and serve.
SPAGHETTI SAUCE
4 tbsp. oil (from browned meat or olive oil)
2 lb. sausage or ground pork or beef or chicken
5-7 cloves garlic (more if you like it)
1 onion
1 1/2 tsp. oregano
1/4 tsp. marjoram
1/2 tsp. basil
1/4 tsp. thyme
1/4 tsp. pepper
Dash and sprinkle salt
Many mushrooms
1/2 c. grated carrots (if you like)
1-2 bell peppers
2 tbsp. Parmesan cheese, grated
72 oz. tomato sauce (many sm. cans or 2 lg. cans)
1 tsp. honey
Fresh parsley
Brown meat in skillet by tearing meat into small pieces in hot skillet, turning meat to cook all sides. Some oil will separate from meat during frying.
In large pot or skillet used to cook sauce in, pour 4 tablespoons oil from meat. Add spice, onion and minced garlic to the heated oil, then stir in the remaining spices. Stir until onions get soft and garlic is a light golden brown (do not allow garlic to get too dark or it will be burned and bitter).
Clean and chop many fresh mushrooms and add to skillet. Add carrots and chopped bell peppers, occasionally stirring as to saute evenly.
Sprinkle with Parmesan cheese. Add tomato sauce cans (cooked tomatoes) to skillet.
Stir in drained browned meat.
Cover pot and let it simmer for an hour, not boil. Make spaghetti pasta 15 minutes before serving preparing according to directions on package.
Wait until that time of the month.
