How do I divide a 2 lb pork tenderloin?!

Question: It's the smallest one I could find but I only cook for two so I'd like to divide it into halves. Can I cut it in half in the middle or should I halve it lengthwise?

Pork tenderloins are usually not that big. If what you have is in a poly bag, it's likely already "divided" being two tenderloins to begin with.

I would split it in the middle. It will probably take longer to freeze and thaw again, but you're less likely to get freezer burn on a larger piece.

Also, a tenderloin is best served in slices instead of longer pieces. By slicing, you cut the connective tissue in the tenderloin and resulting pieces are more tender.

I would just cook as it is and shred whatever is left over and have BBQ sandwiches by adding BBQ sauce to it or season it with taco seasoning and make tacos.

Otherwise, simply cut it in half and freez the part you're not using. Pretty simple, really.
