eat beans, oatmeal, cereal, nuts and seeds, pb&j, whole grain breads and bagels, rice ..and i know potatoes are a vegetable but you can do a lot with them to tweak the flavor(if you don't "like" it.. smashed potatoes, baked potatoes, potato jacket, french fires, ect..and try new foods..have you tried tofu, couscous, hummus, curry, ect.? try making pancakes :). and this might bug you..but are you "Suuure" you don't like vegetables..not even carrots, peas, or the "non leafy tasting" ones...? maybe you just haven't ate them prepared to your taste-bud's liking..try some of these recipes http://www.fatfreevegan.com/ they are all vegan, and most of them include at least a couple of vegetables..and taste amazing. good luck!!! i hope you find new things to eat hun!! :) enjoy your food and don't get bored, cause it sucks when tht happens..been there done that ://...hehe so try new things or/and the same things in new ways...<333xoxoxox
if you want ot cut off meat you should eat more grains and legumes such us lentils, barley, beans and spelt.
eggs are the best to get a lot of proteins. moreover you shoult eat dried fuits like almonds and nuts, because they are a good source of proteins!
If you don't care for vegetables...... try mincing them fine or blending them in a blender, then add to your soups, stews and pasta sauces......

canned soups.....blend in blender....so you won't see the vegetables

Every one is going to tell you to eat turkey. It's a good answer but I do this every now and then.
So...turkey for sure, pasta, (you must like cheese) so any variations of cheese and pasta, but come on, you gotta have your veggies. Try something different with them! Roast or grill them. Start out with roasting some potatoes with a favorite seasoning like garlic or seasoned salt, or even something spicier.
Stay away from pork in any shape or form while your doing this.
You don't eat chicken, so there is always fish and if you get the right kind, it's easy to fix.
