What kind of cheese would I like?!

Question: Right now, I'm trying to learn more about cheese.

I'm currently finishing off a wedge of Wensleydale with cranberries and also a wedge of Pont L'eveque.

Does anyone who knows about cheese have any suggestions for me?

Those are nice cheeses. Here's a few of my favorites.
Bleu fave: Fourme D'Ambert (acknowledging rocquefort)
Marc washed rind: Eppoisses (my favorite cheese of all)
White bloom rind: Explorateur-creamy like butter
Hard aged cheese: 2 to 5 year Gouda
Others: Sottoceneri-ash rind truffle cheese

Try "Murray's" from New York, you can order or learn about plenty of cheeses. Oftentimes local American cheeses from small producers are interesting. Have a tasting party with good beers or wine and a variety of cheeses. Eat em room temp simply with chewy crusty bread like a baguette.

Have you ever tried Jarlsburg?

Edam is a good low fat cheese.

Baked Brie with fresh fruit is always yummy. I also think you would like Gouda.
