Answers: just curious - since its so expensive and comes in a tiny portion.

I will set the story straight, I am a former chef and have used cooked and eaten both fresh, confit and other duck and goose liver product, take wise it is very rich, a bit fatty, not the strong livery taste of chicken or other liver products, as for aquired taste, it is not everyone's cup of tea.

True to achieve the fullness of the liver they have a device, now a mechinize one that they use to feed the ducks mainly, goose is still popular in Europe, the corn/rices mash, as they grow there liver grow faster, not to the point of exploding, the use the livers for foie gras and prepare the rest of the duck either for either breast meat which can be fresh or smoked and tastes a bit like Italian proscioutto, the legs are made into a confit were they are slow cook in the fat and are then served or debone and preserved in the fat, pate du foie gras and other products are livers with either meats, fat, cream or binders in them are sold fresh or in tins.

I am not for the mistreatment of the ducks and geese, but it has been done in Europe since Roman times in the 3-4 th centurys A.D.

It is bloated duck's liver and I don't know how it tastes as I'm a veggie and it's created through an unnatural and cruel process!

Foie gras is is the liver of a duck or a goose that has been specially fattened. It has been outlawed in many places due to what people feel is cruelty to the duck or goose.

It's an acquired taste. Personally, I like it.

It is fatty goose liver. They force feed the geese with tubes down their throats until they almost explode then harvest the liver. I imagine it tastes great.

liver pate made in a cruel way to the goose , i refuse to eat it along w/ milk fed veal

Duck liver, and it depends on the foie gras.....it's soft and odd textured, and can be very flavorful...however, bad foie gras is completly spit-in-your-napkin gag worthy.

Add: I had no idea there was such cruelty involved in it....I just looked it up and confirmed. Horrifying. I'm never eating it again, and am going to tell everyone else I know.

It's called Foie Gras. It's duck liver pate. Pate is like spam, only fancy. It's made with organ meats ground up and mixed with other things. It is expensive because raising the ducks the way they do it expensive. Foie Gras is highly criticized by the animal rights segment because the ducks are treated pretty poorly. They are force fed to increase the fat content in the liver, and it often causes serious health problems.

Foie gras in French means" fat liver " It is fattened Goose or Duck liver...This is done by gavage, which is forced feeding.Causing the liver to become enlarged. This practice is deemed cruel now a day...and many Restaurant in America refuse to serve it and if Im not mistaken it has become illegal to serve in certain states.

It's pate' made from goose or duck liver. It smells and tastes gross.
