Recipe for left over mashed potato patties from 60's or '70 or earlier?!


Question: When I was a kid growing up in the late '60s and '70s my mom used to make some type of leftover,fried,seasoned mashed potato burger/patty. It was nothing extravagant but it tasted so good. It was seasoned with common day spices and made into patties and fried in a cast iron pan. Do any of you remember this old time side dish/recipe? If so, do you know what she might have seasoned it with and how to cook it? Oh memories....

Sometimes I will chop a small onion very fine, throw it into some left over mashed potatoes, add a beaten egg, two or three tablespoons of flour (depends on how many spuds I have) and add enough milk to make a thick batter.

Then I pour them onto a hot griddle and cook until brown on each side. It's sort of like potato pancakes.

I don't think I'd eat a leftover mashed potato from the 60s or the 70s.

What color is it? Is it hard, like a fossil?

My mom made these too. I still make them on occasion. I just add one egg and salt and pepper. I make a small patty and coat it with a light dusting of flour. Just fry in butter till warmed and as crispy as you like. I heard they are good with cheese too, but haven't tried them that way...yet.

Sorry i cant give you that recipe but here is one of mine. Take your mashed potatoes add onion and fry like beancakes. They are really good.
