An éclair is a pastry made with choux pastry (profiterole dough). The dough is piped into an oblong shape with a pastry bag and baked until it is crisp and hollow inside. Once cool, the pastry then is traditionally filled with a coffee- or chocolate-flavored pastry cream (crème patissière), custard or whipped cream, and topped with fondant icing of the same flavor as the filling. Other fillings include pistachio- and rum-flavored custard, fruit-flavored fillings, or chestnut purée.

It's like a doughnut but no hole, and it is filled with cream pudding. Most have a flower in frosting on the top.

It's basically a Boston Creme donut, but shaped longer.

i don't like eclairs. the pastry shell is too light. boston cream puffs are a bit better. or better yet, the japanese version of the cream puff.
