What kind of cheese do you like? I love cheddar and you?!

Question: I have always said that if I were forced to have just one type of cheese and no other, it would have to be Cheddar.
It's not only yummy to eat, it is one of the most versatile cheeses.
For a cheeseboard, I'd probably add a creamy mature Blue Stilton, a nearly walking off the board Brie, Pont L'Eveque, maybe some Taleggio, Mountain Gorgonzola, plus a couple of mild varieties.
As another good cooking cheese (with the odd nibble when nobody was looking!) a big chunk of Parmesan to grate freshly - can't stand that powdery stuff in shaker boxes..
