we make these all the time....regardless of if you put them in the fridge, freezer, or leave them out, they get soggy after about a day and a half....when they are left there sitting, the bottom will get kinda messy and its almost like the strawberry breaks down the chocolate
what we do is once the strawberries have been dipped in the warm chocolate we 'flash freeze' them....stick them in the freezer right away so that the strawberry doesn't get 'cooked' from the warm chocolate...this helps preserve them a little longer....
so in the mean time store them in the fridge till you are ready to eat them

I think choc dipped strawberries are much better if left in fridge otherwise the strawberry goes soggy inside the chocolate.
The chocolate tastes alot better too when its cold and firmly coated on the strawberry.

the fridge is good, but if you really want them to last, try the freezer
keep it in the fridge first. then when you're about to eat them, let it defrost for a bit.
