Popcorn has more moisture in the kernel. It is this moisture that expands when cooking and causes the kernel to explode.

corn on the cob is little and dark yellow. Pop corn is bigger and light yellow

popcorn is popped and from a special corn plant

They are 2 totally different breeds of corn one is sweet corn we eat on the cob and the other is one that is used for processing, and the person who mentioned the moisture issue is correct, the edosperm that protects the popcorn kernel is alot harder and when heated the inner moisture breaks out and form the popcorn bud, there are to type the mushroom and the balloon style, the one is we commonly see at movie theaters and the other is the one they use for making caramel corn and other flavoured ones as it does not deflate or go soggy.
