Well, I once tasted this really good omelete on a cruise.
There was mushrooms, red bell peppers, green bell peppers two kinds of cheese, some onions, some chopped tomatoes, and pepper. I don't think they added any salt. The chef used a pre-whisked concotion of beaten egg and fryed it (without oil). Then she added the ingrediants, wrapped it up, and served it with salsa.

I like to put onions, bell peppers, a pinch of salt and pepper. I also like to add crumbled bacon or sausage or sliced ham, and cheese.
I love omelettes and have been making them for a long time. If i'm feeling lazy, then i'll just put cheese in it. But I personally like a western omellette where I first grill some tomoatoes, jalepenos, and onions, then throw them on the eggs with a couple slices of cheese. There's so many options, you really can't go wrong.
As for salt...I don't usually put any salt on it until afterwards. Just a pinch full.

I have garlic chives, and alight sprinkling of salt, at the table, if I think it needs some.
I don't like to spoil the garlic taste.

zero salt, use chili powder. I put in whatever looks good from the veggie drawer...tomatoes, mushrooms, olives, onions, spinach, bell peppers, etc. Some people use cheese but I dont, it just makes the whole thing sticky.
