CORELLIAN COCONUT OATMEAL COOKIES DIPPED IN CHOCOLATE - Wedge
1 cup Flour
1 tsp Baking Powder
? tsp Baking Soda
1 tsp Salt
? cup Butter – softened
1 2/3 cup Sugar
2 Eggs – large or bigger (I prefer to use Jumbo)
1 ? tsp Pure Vanilla Extract
2 ? cup Quick Oats
1 cup Flaked Coconut
16 oz Milk Chocolate - Melted (I prefer Droste a Milk Chocolate candy bar from Holland)
Preheat oven to 375 F.
Stir together flour, baking powder, baking soda, and salt; set aside. Cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in flour mixture, vanilla and oats. Add coconut. Bake for 10-15 minutes, or until lightly browned at the edges. Cool on a wire rack. One cool dip half of each cookie in the melted chocolate and let harden. Makes about 60 cookies. Cookies will spread when baking.

Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) NESTLé? TOLL HOUSE? Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Directions:
PREHEAT oven to 375° F.
COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
PAN COOKIE VARIATION: Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 20 to 25 minutes or until golden brown. Cool in pan on wire rack. Makes 4 dozen bars.
SLICE AND BAKE COOKIE VARIATION:
PREPARE dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in waxed paper. Refrigerate for 30 minutes.* Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies.
* May be stored in refrigerator for up to 1 week or in freezer for up to 8 weeks.
FOR HIGH ALTITUDE BAKING (5,200 feet): Increase flour to 2 1/2 cups. Add 2 teaspoons water with flour and reduce both granulated sugar and brown sugar to 2/3 cup each. Bake drop cookies for 8 to 10 minutes and pan cookie for 17 to 19 minutes.

Pancake Recipe
INGREDIENTS:
2 cups all-purpose flour, stirred or sifted before measuring
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 1/2 cups milk
2 tablespoons melted butter
PREPARATION:
Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake. Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.

Cornflake biscuits
This recipe is included in 'Homecooked: Favourite Recipes from Australian Kitchens' (ABC Books).
Degree of difficulty: Low
You need:
125g butter or margarine
3/4 cup (165g) sugar
1 egg
1 cup (150g) self raising flour, sifted
1 cup (175g) sultanas
cornflakes to coat
Method:
Preheat the oven to 180 dg C or about 350 to 375 dg F. Grease two baking trays. Using electric beaters, beat the butter and sugar until light and creamy. Beat in the egg. Fold in the flour and sultanas. Take small spoonfuls of mixture, make into balls and roll in cornflakes. Flatten out a little. Place onto prepared tray and bake for about thirty minutes.

1 (14 ounce) can EAGLE BRAND? Sweetened Condensed Milk (NOT evaporated milk)

1 1/3 cups flaked coconut
1 (12 ounce) package semi-sweet chocolate chips
1 cup chopped walnuts
Preheat oven to 375 degrees F. In small bowl, combine graham cracker crumbs, flour and baking powder.
In large mixing bowl, beat EAGLE BRAND? and butter on low until smooth. Add crumb mixture; mix well. Stir in coconut, chocolate chips and walnuts.
Drop by rounded tablespoons onto ungreased cookie sheets. Bake 9 to 10 minutes or until lightly browned Store loosely covered at room temperature.

This is the easiest peanut butter cookies recipe I've ever found and it is wonderful!
1 cup peanut butter (smooth or chunky)
1 cup granulated sugar
1 egg
Mix together and drop by spoonfuls on a greased cookie sheet. Bake at 350 degrees for 10-13 minutes or until light golden brown. Let sit for about 2 minutes on pan before transferring to cooling rack.
If you want them a little more puffy, you can add 1 teaspoon of baking soda, although they are just chewier without it.
Chocolate Chip Cookies (Can't get easier then this!)
NGREDIENTS
* 1 (18.25 ounce) package yellow cake mix
* 1/2 cup butter, softened
* 2 eggs
* 1 teaspoon vanilla extract
* 2 cups semisweet chocolate chips
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C).
2. Pour the cake mix into a large bowl. Stir in the butter, eggs and vanilla with an electric mixer until well blended. Stir in the chocolate chips. Drop by rounded spoonfuls onto cookie sheets.
3. Bake for 11 to 15 minutes in the preheated oven, until the edges are golden. Cool on baking sheets for a few minutes before removing to cool on wire racks.
