I know what is Kosher meat but what is kosher chocolate ??

Kosher chocolate wouldn't be made with lard. Lard is from a pig which is not Kosher. It would be made with a vegetable shortening like Crisco.
For an animal to be kosher: It must have split hooves; chew it's cud (be a ruminant), be killed in a ritual way that is least painful to the animal & is overseen by a special rabbi. It must also be salted & have all the blood drained from it before it can be eaten.
Kosher Chocolate is the same as regular chocolate. The Hebrews just want to label some that they KNOW the ingredients was kosher and nothing questionable has been added. Then once they confirm that, they label it as kosher and a devout Jew can consume it without guilt.

b. adhering to the laws governing such fitness: a kosher restaurant.
2. Informal. a. proper; legitimate.
b. genuine; authentic.
Since being Kosher means separate milk and meat, you wouldn't want to eat MILK chocolate after a meat meal.
They just need to know what it is made of.
