I pronounce it the first way (northeast U.S.)

It depends on where in the world you come from.

Here in the States, I've heard it called "carmel", but I (from the UK) - call it car-a-mel.

I pronounce it Carmel (altogether without the emphasis on the a in the middle) and say "car" versus "care".

Seems to be a personal preference thing, since I hear it both ways frequently.
