Vanilla ice cream is just plain ice cream with vanilla extract added. The New York and French vanilla versions usually have a custard base; which means egg is added to make it richer. Vanilla bean is just that; bits of vanilla from the bean are added which also amplify the flavour.

Vanilla Bean is the best to me. It's richer than regular vanilla. Purer too as you can tell by the color, I guess.
