amount of meat and personally i would choose course meat which would suggest you are getting a quality sausage rather than processed meat mixed with other stuff.
I hate the ones filled with meal , horrible.

Quorn is usually the quality I look out for...
right . first it cant be black and crusty on the outside. just brown.
it has to be around 3 inches big.
it has to be quite hot .
when i bite it it has to be REALLY juicy, not salty,,juicy and meaty. the smell HAS to make my mouth water.
oh and ketchup is required.
Less fat and more meat!
High lean meat content is usually a good sign. Some brands fill their sausages with a lot of fat and other entrails and cereal.

I like Italian Sausages, South African Sausages Boerwursch., Anything that has Garlic and Herbs and Meat not Cheap Rubbish.

The ability of the sausage to fill one up is a definite must, as well as it's longevity...
meat, loads of it, so size and oh yes taste, why have a sausage otherwise, but most of none of those horrible plastic like skins!
I dont know ask Manda...she loves plenty of meat but its gotta be hard....personally i like a bit of added spice
