I am making pasta for 250 people, can we pre-cook the pasta and place in baggies then reheat?!
Answers: That's the only feasible way to do it. You will not sacrifice much quality that way. It is how we always do it for banquets. Just be sure it is extra firm when you finish cooking it--not hard, just extra al dente. Shock it in cold water to stop the cooking. Also be sure to toss it in a little oil (olive oil is best) so it does not stick together. Dip it in boiling water for a minute or two at service time.

I owned a restaurant,we did it this way all the time. Just don't cook the pasta all the way.When you are ready for it,place it in boiling water for about 2 minutes. It will be like you just made it.

Pasta freezes well too. Just make sure you freeze it in clear water. Then place in a pan of boiling water to reheat. Be careful!
