Suggestions for dinner for someone who works night shift?!


Question: My boyfriend is on nights this week, while I'm on days (always). He'll wake up around 5pm, so serving up a full dinner at 6.30 often seems a bit much to start the 'day' on. Any creative suggestions for what would be a nice dinner for me (I'm not keen on bacon & eggs at dinner time...) but not too full-on for his just-woken-up stomach? Usually Tuesday night is steak night at our house (Gordon Ramsay's recipe is the BEST) but maybe not tonight...

BLT's and homemade soup

Omelets

a nice breakfast casserole (not just for breakfast)

Farmers Casserole

1/8 tsp salt
4 beaten eggs
1/4 tsp pepper
12 oz can evaporated milk
1/4 cup sliced green onions
1 cup diced fully cooked ham
3 cups frozen shredded hash browns thawed
3/4 cup shredded Monterrey jack with jalapeno peppers


Preheat the oven to 350 degrees and grease a 2 quart square baking dish. Arrange potatoes evenly in the bottom of dish and sprinkle with cheese, ham and green onion. In a medium mixing bowl combine eggs, milk, pepper and salt then pour over potato mixture in dish. Bake the Farmers Casserole for 40 to 45 minutes or until center appears set. Let stand for 5 minutes before serving.

Don't try 2 excell yerself now bud, otherwise he might get the wrong idea!....

try making chicken noodle soup from scratch or get you some taco mix or something of that nature

Have you thought about jacket potatoes, or beans on toast?

How about a light pasta dish like Macaroni cheese served with lightly grilled tomatoes and toast triangles?

The tomatoes add colour and zing to the flavour and the toast adds crunchy texture.

If you dont wanna heavy brkfst for him keep it to simple brkfst items. My hubby use to do night shifts and we had our own dinner while he had eggs, bacon and toast usually. Or make him a simple one pot dish like spaghetti, penne with cream sauce and steak, it wont be super heavy and the carbo loading he gets from the pasta will give him energy to get thru the first part of his shift. As for lunches for him what ever he wants works too. Oatmeal is a good starter for the day too if he can stand it. Or cream of wheat with fruit is good too.

Light dishes would be terrific...protein more, like a side rice dish w/ chix & veg, & salade....

Or a steamed fried rice w/ a meat & veggies.....

hi, i work nights (3 a week)& i can not eat a big meal before work. i tend to have beans on toast, soup & a nice sandwich etc. i then eat again at work around midnight where i have sandwiches, a flask of soup & a big mug of tea.then when i get home in the morning a bowl of coco pops with another mug of tea.sorry it's not very imaginitave but this is what i do & have done for years .
if you want to make an effort then make him something nice to take to work. it's always nicer than canteen food both in quality & the fact your lady made them for you.
