Question: I originated in Asia around 3,000 years ago. Many thought I was weed; for many years I was food for the Roman horses. Because of my high fat content, I go rancid and do not store well. In the early 7th century, Scottish settlers brought me to North America. George Washington planted me. My humble beginnings were for medical purposes. I am also used as a cosmetic, soaps, adhesive, cat litter, and biodegradable plastics.

Recently researchers have found that I contain more soluble fiber than any other grain. Now, I am able to lower cholesterol, reduce high blood pressure, reduce colon cancer, and lower bacterial infections. I have 66.5% manganese, 27% selenium, and 25% tryptophan.
