Don't think of the "5 portions of fruit and vegetables" as a strict doctrine... the idea is to eat a wide variety of foods with balanced nutrition.
Answers: I wouldn't consider an olive to be equivalent to another fruit or vegetable. Olives can be high in calcium, iron, and dietary fiber, but they're also tremendously high in sodium, and low in other nutritional value.
