I would be a hand-made, high-moisture, aged Habanero Jack from Sonoma, California. It melts in your mouth, and is delicate with alot of unpredictable spice. Because it is hand-made with a lot of time and attention going into it, each wheel has a slightly different characteristic from the other. No two are alike.
It's so versatile and can be eaten alone, as a topping, as a dip, or paired with a mellow cabernet.
