Answers: what is the white "thing" attached to the yoke ....I take it off before I use the egg?

I RECENTLY DID THE GREAT BACKYARD BIRD COUNT AND FOUND THE ANSWER TO THIS ON THEIR SIGHT IT IS CALLED CHALAZA AND IS COMPOSED OF ONE OR TWO SPIRAL BANDS OF TISSUE THAT SUSPEND THE EGG YOLK IN THE CENTER OF THE EGG WHITE, IT IS CLOUDY AND WHITE AND IF YOU PULL IT, IT ACTS LIKE A SPRING AND WILL BOUNCEBACK, CHALAZA IS THE AGENT THAT MAKES SOME OF THE WHITE OF THE EGG STICK TO THE YOLK WHEN YOU REMOVE THE YOLK FROM THE EGG LOOK IT UP IN THE DICTIONARY.

It's just called the whites
