New ways to eat veggies?!

Question: I'm trying to incoporate more veggies into my lifestyle. I love tomatoes, cucumbers, bell peppers, etc...(and I like most vegetables raw, which I hear is the healthiest way to eat them).

Cucumbers are one of my favorites! Some ways that I like to eat them is with tomatoes (cucumber tomato salad with a vinegar dressing), in a regular tossed salad, slightly salted, or dipped in a little bit of ranch or italian dressing.

When I was a child my grandfather used to slice cucumbers that he got from his garden in the summer time, and he would season them. I can not remember what he seasoned them with! I tried cutting a cucumber and putting salt and a tiney bit of garlic salt on it, but it didnt have the same taste...

Anybody have a favorite way to eat their veggies?

Believe it or not, hot steamed veggies are yummy with ranch dressing!
Was it possibly dill that Grandpa sprinkled on the yummy cukes?

i looove eating french cut green beans and i love eating anything with chopsticks, even though it is kinda hard

Dice up a cucumber, a boiled egg, and add mayo, and make a sandwich

I prefer my veggies raw with ranch or just salt. I eat every color pepper that there is along with carrots and I love just plain old lettuce no dressing, just salt. I have found that if you have to have your veggies cooked the best and most nutrcious way is to buy frozen and steam them.

you could try this link ^ but i dont really know alot of dishes...one thing you could try though is:

stuffed bell peppers
macaroni salad with pineapples, red peppers etc.
vegetarian stir fries
tomato or spinach wraps> could stuff them with ham, turkey, cheese, coleslaw, almost anything, their very good

different types of soups...such as tomato soups with celery, carrots, and maybe chicken or another type of meat

My overall favorite to eat vegetables though would have to be iin an Asian styled Stir fry or in a sub or grinder such as home made or Subway.

- Hope this helps!
