Why is crab considered a fancy food when it is so messy to eat?!

I guess it adds to the luxury and the texture of the food doesnt it?

the more expensive a food, the 'fancier' it is.

Crab is expensive because a lot of work has to go into the preparation and wealthy people can hire people to do all the preparation work for them. Its not considered fancy when you do it yourself.
