Secondarily, there is a certain exclusivity associated with it's capture and transport, associated with the price: The animal lives up until a short period of time before the meal, usually. There is the savoring of fresh kill, without having to leave the dinner table. Refined and primal in the same moment.

the more expensive a food, the 'fancier' it is.
Crab is expensive because a lot of work has to go into the preparation and wealthy people can hire people to do all the preparation work for them. Its not considered fancy when you do it yourself.
