Catering pasta exam?!
Answers: on thursday i have do a mock exam in catering and it has to be a homemade pasta dish with at least 3 different fruit or veg in it and i have to make a sauce to go with it, it has to be reasonably easy, impressive and made in under an hour and a half. any suggestions?
Bowtie pasta and panchetta, with sauteed shrimp or chicken, garlic, mushrooms, red onion, red pepper strips, and zucchini all done in a light cream sauce with parmesan cheese and a bit of red pepper flakes. very yummy and nice presentation
Try Shrimp fettucine with a red sauce. Dice up onion and very fine red peppers, maybe a little zuccinni on the side?
Vegetable lasagne with cheese sauce?
Make the sauce from Tomatoes (1 veg - well, technically a fruit).
What about Aubergine (sliced and griddled) and maybe mushrooms and some fresh tuna steak.....

how about a sweet lasagne, layer pasta sheets with stewded apple, rhubarb and sultanas and dust the top with cinnamon and sugar,serve with proper custard for your sauce!! Yummy

at outback i love the pasta they make. it has seasoned chicken and ham in it. its really herby and thats what i like. they have alot of sundried tomatoes. and they use piene(sp) noodles. i prefer those cause its easier to pick up with a fork. plenty of parm. cheese too! i love pasta lol. they also but mushrooms in it but i dont like mushrooms but maybe u could use those.
A pasta salad: Spiral noodles, with green and red peppers, tomatos, cheese (like feta), salami squares, mix with italian dressing (can be homemade)
