* 1 (19 ounce) can kidney beans with liquid
* 1 (11 ounce) can whole kernel corn, undrained
* 1 tablespoon ground cumin
* 1 1/2 teaspoons dried oregano
* 1 1/2 teaspoons dried basil

DIRECTIONS

1. Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
2. Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

Try going out to Sweet Tomatoes. They don't serve any meat at those places. Personally, I've never eaten there. It ain't a meal without meat for me!

make a nice tofu pasta dish... bell peppers, onions, olive oil, garlic, pasta, tofu... yummy (use the firm tofu and cube it, the garlic and onion will make it taste nice)

what i would do is get a nice pasta,pizza,or go to a bufet and make one hell of a salad

Ceasar salad, breadsticks, pasta with marinara sauce, yum!

Bean burritos, rice, salsa, chips and cheese dip

Garlic butter noodles

How about spicy lentils and a green salad? And since you are eating so healthy, you can go out for ice cream later.

Hmm It's no meat everyday for me because I am a Lacto - Vegetarian.

I eat for dinner's rice with vegetable burger and salad or veggies or pasta with cheese anything meat and fish free :-)

make some salmon patties. or some salmon steaks! how about veggie burgers? they are excellent! or you could have finger foods like veggies and dip, cheese and crackers and some yummy dessert.

You could have a "Breakfast for Dinner" type night. Make some pancakes, hash browns, eggs, etc. Its not everybody's cup of tea, but I know some families who do this periodically.

I believe I'll thaw a steak. But some fried or broiled fish might be nice. Talapia, pollock, cod; nothing fancy. A little wedge of lemon and a few spices with a side of fresh, hot veggies. That might do it.
