To test the freshness of hen's eggs:
If they float in cold water then they are "off" but good for throwing at politicians - smelly!
If they stay on the bottom of the water = OK but if one end tries to float then use immediately.
Best before dates usually leave a large safety margin; your nose is the best guide for perishable goods.
They will be fine if you eat them within the next couple of days... I have had eggs 7 to 10days after the best before date. Best Before is only a recommendation...

is the SELL BY DATE.
but the products are still good to eat for 5 to 7 days after that.
Now canned goods and dry boxed goods...believe it or not...also have USE BY dates on them...in very very small print....those dates..honor...eat the stuff before the date.

They should be OK depending how you have stored them.
If in doubt test them in water first. If they sink they're OK, if they float, they're bad.
When you crack them the whites should be firm, as the eggs get older the whites turn watery.
If the egg has gone off when cracked it will smell absolutely dreadful.
When eggs go off hydogen sulfide (v. smelly) gas is produced in the egg. making it float in water. I worked in a bakery and this is how we tested them.
But if you have any doubts about it i wouldn't risk it cos it will totally ruin the food and you could be very sick.
the best way to test if an egg is off or not is to place them in some cold water. A fresh egg that is not off should sink to the bottom, while an off egg will float.
This is because there is a small air sac in the egg, and when fresh there is hardly any air there, but as it goes bad, the air increases, making the egg float. So, as the egg gets bad, the more it will float.
