What is the name of a dressing you dribble over salad, it is oily with a taste of vinegar?!

vinaigrette. a mixture of oil and vinegar, can often contain seasonings too, and herbs. different types of oils and vinegars can be used to create different flavours eg. balsamic vinegar, red wine vinegar. olive oil, sesame oil etc etc.

- often flavored with herbs, spices and other ingredients
- sometimes more tastier with salt and pepper
- herbs enhance the flavour
- mustard can keep oil and acid in an emulsion.
It is used as sauces and salad dressings, like you have said.

in french restaurants, popular vinaigrettes include raspberries, anchovies, lemons and truffles as main ingredients.

I guess you are talking about what we call French Dressing (in England) or vinaigrette or salad dressing. Simply oil and vinegar - but better to use olive oil and a wine vinegar. Vary it by adding some herbs, mustard, garlic etc whatever you fancy.
In England we tend to call it French dressing but I don't think they call it that in France - never seen it called that anyway. Think in the US also call it French Dressing. Just a name.
