Cheeses: Why are they different?!


Question: There are tons of different cheeses, but i don't get it what makes the diff types different? And why does cheddar come in sharp/medium/mild, while mozzarella is just mozzarella?

There are different types of cheese because people like variety. They all start with milk (not always cow's milk) but the next stepsvary a lot, producin very different types of cheese.

Sharp cheddar is aged longer than milder cheddars. In the U.S., some of the cheese we call "mild cheddar" aren't truly considered a cheddar by other countries.

There are different types of mozzarella too. Buffalo mozzerella, fresh mozzerellas that are wet and creamy, etc.

Unlike many other cheeses, Mozzarella is a fresh cheese, not aged. It doesn't have particular molds that flavor it and it's flavor doesn't get altered by different aging methods. There is less opportunity to develop unique characteristics during its production. That's why all mozerellas taste so similar (but not exactly alike)

Cheese also tastes different depending on what region of the world it came from.

Also, I saw a good book on cheese at the bookstore the other day. Its called "The World Encyclopedia of Cheese" - Juliet Harbutt. Amazon has it too.

cheeses are made from milks from cows (hard cheeses) and sheep and goats (softer cheese)
bacteria in different forms inside the cheese create the cheeses like swiss (the bacteria off-gasses causing holes) and blue cheese (mold type baceria)
aged cheddar becomes sharp
mozerrella is a watery cheese and solidifys

Got me i don't know anything about cheese except what i like , don't let something like that consume your time its not worth it

Not to mention all the different smells you get when you cut the cheese!

living in wisconsin i should know this
the different kinds of cheese depends on what type of milk is used like cow or sheep etc
and like extra shart cheeder depends on how long it is aged
