What happens when you mix white vinegar and skim milk?!

It will curdle. A lot of recipes for homemade cheese asks for it, to curdle the milk. The same thing will happen if you put lemon juice in milk, it has to do with the acid.

It will sour the milk. Some recepies call for this

The vinegar (an acid) will cause the milk proteins to coagulate (aka curdle) and you've made yourself a very simple cheese similar to Panir (Indian), Queso Blanco (Mexican) or Ricotta (Italian).

1 gallon of milk
1/4 cup of vinegar

heat to about 180F pour in vinegar and stir.
Let cool and drain off the liquid into cheesecloth or a clean hankerchief. The remaining solids is the cheese.
